Today I tried to make a healthy dinner. One day after I complained about the healthy, hearty, homemade shepherd’s pie that Alice made, I cooked this for dinner:
Roast chicken with a side of garlic bread, or garlic bread with a side of roast chicken, depending on which way you look at it.
This is what happens when I’m left at home alone. I fancied something a bit healthier and I had visions of making a kind of chicken-salad thing with some spinach and rocket, some hard cheese and a bit of balsamic glaze. The garlic bread was the croutons, I guess?
Anyway, when I got the chicken out of the oven I realised that we didn’t have any salad leaves, so my chicken salad idea was kind of out the window. And I thought it would be a bit weird to just put mature cheddar on the side of the plate. And it turned out that the balsamic glaze we have is actually balsamic vinegar.
So in the end my dinner turned into roast chicken with a side of garlic bread, or garlic bread with a side of roast chicken, depending on which way you look at it.
Until tomorrow, it was like being back at University.
