Today Meal Prep Sundays made a vengeful return. I drove past a Lidl on my way back from seeing my family, and decided it was probably smart to do a weekly shop, else I’d’ve ended up eating Weetabix for dinner when I got home and realised the Tesco across the road closes at 4 on Sundays.

I decided to buy enough ingredients to make a massive fucking spag bol, and dish out enough portions to feed me for the rest of the week. It was a pretty massive one as well.

I kind of went all out. Put celery, carrots, and onions in a food processor and sweated them for a bit over a low heat. That kinda thing. Food processor is more hassle than it’s worth, mind. You’ve gotta chop the pieces small enough for the blender to do it’s work, which means you’re basically chopping the vegetables anyway, and the blender is supposed to save you that hassle.

I’ve always been told that a spag bol gets better the longer you cook it, so I got it all going by like 4, and then left it cooking while I went for a run. Perhaps dangerous. Though I’m not sure what damage a lightly simmering pot of minced beef could really do. Also I’m fairly sure my Mum’s left food on and left the house before, so it’s probably fine.

And it was!

It was fine indeed.

And the good news is I’ve got about 14 more portions in the fridge to feed me for the rest of the week, so I don’t have to bother cooking again.

Until tomorrow, it’ll only take a day to get bored of it.
