Today was Mexican Thursdays except on a Friday instead this time. I made the carne asada quesadillas I’ve been looking forward to all week. Topped with chimichurri, manchego, cilantro and and salsa, there are a lot of fun-to-say ingredients involved.
Fun to say, fun to eat.
Mexican Thursdays is an integral part of my new weekly menu, except last night I went out to a restaurant for food, so had to delay true famed Mexican Thursdays until Friday. Mexican Fridays don’t sound as good as, for absolutely no reason at all.
I did eat two large chicken breasts, and now I’m tired, so it’s sleep time.
